Veggie Heavy Pizza Sauce
Ingredients:
- 2 cups diced tomatoes
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup diced mushrooms
- 1/4 cup grated carrots
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes optional
Instructions:
In a saucepan, heat the olive oil over medium-low heat
Cut up some garlic, onions, and bell peppers and add them
As it gets soft, saut for two to three minutes
Add the diced mushrooms and grated carrots and mix them in
Keep cooking for two to three minutes more, until the vegetables are soft
Salt, black pepper, red pepper flakes if using, and dried basil and oregano should all be added
Turn down the heat and let the sauce simmer for 15 to 20 minutes, stirring every now and then, until it gets thick and the flavors blend
Take the sauce off the heat and let it cool down a bit
You can use an immersion blender or a regular blender to blend the sauce until it gets to the consistency you want
You can put the Veggie Heavy Pizza Sauce on top of your favorite pizza dough and enjoy
