Twice Baked Potatoes
Potatoes that have been baked twice are a comforting and filling dish that is great for a quick dinner or a casual lunch. It is filled with cheese, bacon, green onions, and creamy mashed potatoes. It is then baked until golden and bubbly.
Ingredients:
- 4 large russet potatoes
- 1/2 cup sour cream
- 1/4 cup milk
- 1/4 cup butter
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 2 green onions, chopped
- Salt and pepper to taste
Instructions:
Warm the oven up to 190C 375F
Clean the potatoes and use a fork to make several holes in them
For about 45 to 60 minutes, or until potatoes are soft, bake them directly on the oven rack
After the potatoes have cooled, cut off the top and scoop out the insides, leaving a thin shell
Put the potato insides in a bowl and add the sour cream, milk, and butter
Mash the mixture until it is smooth
Add half of the crushed bacon, half of the shredded cheese, and half of the chopped green onions
Add pepper and salt
Place the potato mix inside the potato shells again
Add the rest of the cheese, bacon, and green onions to the top of each potato
For another 15 to 20 minutes, or until hot all the way through and the cheese is melted and bubbling
Enjoy while hot
