Ingredients: 2 cups chopped butternut squash 1 cup chopped carrots 1 cup chopped celery 1 cup chopped onion 2 cloves garlic, minced 4 cups vegetable broth 1 cup diced tomatoes 1 teaspoon dried thyme 1 teaspoon dried rosemary Salt and pepper to taste 2 cups chopped kale or spinach Instructions: In a slow cooker, mix everything together except the kale or spinach Set the timer to low and leave it on for 6 to 8 hours Add the chopped kale or spinach in the last 30 minutes of cooking Add pepper and salt to taste Enjoy while still warm
