Coconut Almond Popsicles
In these cool popsicles, the creamy coconut milk goes great with the nutty flavor of almond butter. You can make them your own by adding shredded coconut flakes and chopped almonds for extra crunch. They are sweetened with honey or maple syrup.
Ingredients:
- 1 can 13
- 5 oz coconut milk
- 1/4 cup almond butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup shredded coconut flakes optional
- 1/4 cup chopped almonds optional
Instructions:
Put almond butter, honey or maple syrup, vanilla extract, and coconut milk in a blender
Mix until its smooth
For extra texture, you can add shredded coconut flakes and chopped almonds if you want to
Put the mixture into popsicle molds, leaving some room at the top for them to rise
Place a popsicle stick in each mold
It needs to be frozen for at least 4 hours or until it is solid
Run the molds under warm water for a few seconds to help the popsicles come out of the molds after they are frozen
