Paleo Sweet Potato Meringue Pie
A delicious Paleo twist on the classic sweet potato pie, topped with a fluffy meringue. This pie is sweetened with natural ingredients like maple syrup and honey, making it a healthier option for dessert.
Ingredients:
- 2 medium sweet potatoes, cooked and mashed
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 3 eggs, separated
- 1/4 cup honey
- 1/2 teaspoon cream of tartar
Instructions:
Set oven temperature to 175C 350F
Mashed sweet potatoes, melted coconut oil, maple syrup, egg yolks, cinnamon, and nutmeg should all be combined in a bowl
Blend thoroughly
Evenly distribute the sweet potato mixture into the pie crust that has been prepared
Beat the egg whites until frothy in a different bowl
Beat in the cream of tartar and honey and continue until stiff peaks form
Making sure to seal the edges, spread the meringue evenly over the sweet potato filling
Bake until the meringue is lightly golden, 15 to 20 minutes
Take out of the oven, allow it to cool, then slice
Present and savor
