Cookie Dough Filled Cookie Sandwiches
Ingredients:
- For Cookies:
- - 1 cup unsalted butter, softened
- - 3/4 cup granulated sugar
- - 3/4 cup brown sugar, packed
- - 2 large eggs
- - 1 teaspoon vanilla extract
- - 2 1/4 cups all-purpose flour
- - 1 teaspoon baking soda
- - 1/2 teaspoon salt
- - 2 cups chocolate chips
- For Cookie Dough Filling:
- - 1/2 cup unsalted butter, softened
- - 1/2 cup brown sugar, packed
- - 1/4 cup granulated sugar
- - 2 tablespoons milk
- - 1 teaspoon vanilla extract
- - 1 1/4 cups all-purpose flour
- - 1/4 teaspoon salt
- - 1/2 cup mini chocolate chips
Instructions:
For Cookies: Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth
Beat in the eggs, one at a time, and then stir in the vanilla extract
In a separate bowl, whisk together the flour, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Stir in the chocolate chips
Drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
For Cookie Dough Filling: In a bowl, cream together the softened butter, brown sugar, and granulated sugar until creamy and well mixed
Beat in the milk and vanilla extract
Gradually add the flour and salt, mixing until smooth and dough-like
Stir in the mini chocolate chips
To Assemble: Take a cooled cookie and place a spoonful of cookie dough filling on its flat side
Top with another cooled cookie, flat side down, to create a sandwich
Gently press the cookies together to spread the filling
Repeat with the remaining cookies and filling
Serve immediately or refrigerate until ready to enjoy
Optionally, dust with powdered sugar before serving
