Roasted Tomato and Garlic Pasta
The sweet roasted tomatoes and caramelized garlic in this roasted tomato and garlic pasta make it taste great. This dish is easy to make and tastes great. Its great for a quick dinner during the week or a casual get-together with friends.
Ingredients:
- 500g cherry tomatoes
- 6 cloves garlic, minced
- 3 tbsp olive oil
- Salt and pepper to taste
- 300g pasta of your choice
- Fresh basil leaves for garnish
- Grated Parmesan cheese for serving
Instructions:
Preheat the oven to 400F 200C
In a baking dish, toss cherry tomatoes and minced garlic with olive oil, salt, and pepper
Roast in the preheated oven for 20-25 minutes, or until tomatoes are blistered and garlic is golden brown
While the tomatoes are roasting, cook pasta according to package instructions until al dente
Drain and set aside
Once the tomatoes are done, toss them with the cooked pasta in a large bowl
Serve hot, garnished with fresh basil leaves and grated Parmesan cheese
