BBQ Tofu Bowls
These BBQ tofu bowls are a delicious and wholesome vegan and gluten-free meal option. The tofu is marinated in tangy barbecue sauce and baked until crispy, while the mixed vegetables add freshness and color. Served over a bed of quinoa or rice and topped with creamy avocado slices, these bowls are both satisfying and nutritious.
Ingredients:
- 1 block extra-firm tofu, pressed and cubed
- 1 cup barbecue sauce ensure its vegan and gluten-free
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 3 cups cooked quinoa or rice
- 2 cups mixed vegetables such as bell peppers, zucchini, and red onion, chopped
- 1 avocado, sliced
- Fresh cilantro, for garnish
Instructions:
Start by heating the oven to 400F 200C
Put the olive oil, garlic powder, smoked paprika, salt, and pepper in a bowl and mix them together
Put the cubed tofu in the bowl and mix it around until its spread out evenly
Place the tofu cubes on a baking sheet lined with parchment paper
Bake for 25 to 30 minutes, flipping them over halfway through, until they are crispy
Meanwhile, put the mixed vegetables on a second baking sheet lined with parchment paper and roast them for about 20 minutes, or until they are soft
To make the bowls, divide the quinoa or rice, roasted vegetables, and BBQ tofu among serving bowls once the tofu and vegetables are done
Add slices of avocado and fresh cilantro on top
Serve right away and enjoy
