Autumn Harvest Veggie Soup
This warm and hearty Autumn Harvest Veggie Soup is perfect for chilly days. Packed with nutritious vegetables, herbs, and flavorful broth, its a comforting meal for two.
Ingredients:
- 2 cups chopped butternut squash
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups chopped kale or spinach
Instructions:
In a slow cooker, mix everything together except the kale or spinach
Set the timer to low and leave it on for 6 to 8 hours
Add the chopped kale or spinach in the last 30 minutes of cooking
Add pepper and salt to taste
Enjoy while still warm
