Parfait Pancakes
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1/4 cup plain Greek yogurt
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fresh strawberries, diced
- 1/2 cup granola
- Maple syrup for serving
- Whipped cream for topping optional
Instructions:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt
In another bowl, whisk together the buttermilk, Greek yogurt, egg, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; its okay if there are a few lumps
Heat a non-stick skillet or griddle over medium-high heat and lightly grease it with cooking spray or butter
Pour 1/4 cup of pancake batter onto the skillet for each pancake
Cook until bubbles form on the surface, then flip and cook the other side until golden brown
Remove the pancakes from the skillet and keep warm
To assemble the parfait pancakes, layer a pancake with diced strawberries and granola
Repeat with another pancake, more strawberries, and granola until you have a stack
Drizzle with maple syrup and top with whipped cream if desired
Serve immediately and enjoy
