Paleo Morning Glory Quick Bread
This is a tasty and wholesome breakfast or snack option: Paleo Morning Glory Quick Bread. Its grain and gluten free and made with almond, coconut, and tapioca flours. Packed full of nuts, coconut, apple, and grated carrots, and sweetened with honey, its a healthy and flavorful dish.
Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup tapioca flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3 large eggs
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1/2 cup grated apple
- 1/4 cup shredded coconut
- 1/4 cup chopped pecans or walnuts
- 1/4 cup raisins or chopped dates
Instructions:
Preheat oven to 350F 175C
Grease a loaf pan with coconut oil
In a large mixing bowl, combine almond flour, coconut flour, tapioca flour, baking soda, salt, cinnamon, and nutmeg
In another bowl, whisk together eggs, honey, melted coconut oil, and vanilla extract
Pour wet ingredients into the dry ingredients and stir until well combined
Fold in grated carrots, grated apple, shredded coconut, chopped nuts, and raisins or chopped dates
Pour the batter into the greased loaf pan and smooth the top with a spatula
Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean
Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely
Slice and serve
