Easy Crock Pot Potato Soup
This simple potato soup made in a crock pot is creamy, warm, and great for a night in. If you only need to prepare a few simple ingredients, you can let your slow cooker do most of the work while you enjoy a delicious home-cooked soup.
Ingredients:
- 6 potatoes, peeled and diced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Optional toppings: chopped green onions, bacon bits, sour cream
Instructions:
In a slow cooker, combine diced potatoes, diced onion, minced garlic, and chicken or vegetable broth
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender
Using an immersion blender, blend the soup until smooth
Alternatively, you can transfer half of the soup to a blender and blend until smooth, then return it to the slow cooker
Stir in heavy cream and shredded cheddar cheese until cheese is melted and soup is creamy
Season with salt and pepper to taste
Serve hot with optional toppings such as chopped green onions, bacon bits, and sour cream
