Instant Pot Kung Pao Chicken

In a quick and easy Instant Pot recipe, you can enjoy the strong flavors of Kung Pao Chicken. A savory and slightly spicy sauce is mixed with tender chicken thighs. Crunchy peanuts and fragrant spices go well with the sauce. Great for a filling dinner during the week

Ingredients:

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup hoisin sauce
  • 1/4 cup rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1/2 cup roasted peanuts
  • 4-6 dried red chili peppers, chopped adjust according to spice preference
  • 2 green onions, chopped for garnish
  • Cooked rice, for serving

Instructions:

Put the Instant Pot on Saut and add the oil

Cut up the garlic and ginger and add them to the hot oil

Cook for about one minute

Put the chicken pieces in the pot and cook them until all sides are browned

Soy sauce, hoisin sauce, rice vinegar, brown sugar, cornstarch, and water should all be mixed together in a bowl

Add the sauce to the Instant Pot and pour it over the chicken

Chop up some dried red chili peppers and roast some peanuts

Put the lid back on the Instant Pot and set it to Manual or Pressure Cook for 5 minutes

After cooking, quickly let the pressure out

Be careful when you open the lid and stir the chicken

Put the Kung Pao Chicken on top of rice that has already been cooked

Add some chopped green onions as a garnish
