Bacon-Infused Potato and Leek Soup
Ingredients:
- 6 slices bacon, chopped
- 2 leeks, white and light green parts, sliced
- 3 cloves garlic, minced
- 4 large potatoes, peeled and diced
- 6 cups chicken or vegetable broth
- 1 cup whole milk
- Salt and pepper to taste
- Chopped chives for garnish optional
Instructions:
Put the chopped bacon in a big pot and cook it over medium-low heat until it gets crispy
Take some out to decorate with and leave some in the pot
Put the sliced leeks in the pot and cook them until they get soft
Add the minced garlic and cook for one more minute
Put the diced potatoes in the pot first, then the chicken or vegetable broth
Bring to a boil, then lower the heat and let it cook slowly until the potatoes are soft
Blend the soup until its smooth with an immersion blender
If you dont have an immersion blender, carefully move the soup to a blender one bowl at a time
Add the milk and season with pepper and salt to taste
Let it cook for another 5 to 10 minutes
If you want, you can serve the Potato and Leek Soup hot with the crispy bacon and chopped chives that you saved
