Sweet and Sour Chicken Fried Rice BITE
Ingredients:
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 cup cooked white rice, chilled
- 1/2 cup pineapple chunks, drained
- 1/2 cup bell peppers, diced assorted colors
- 1/4 cup red onion, diced
- 2 cloves garlic, minced
- 1/4 cup cornstarch
- Oil for frying
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1/4 cup sweet and sour sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1/4 cup sugar
- 1/4 cup water
- Sesame seeds and green onions for garnish
Instructions:
In a bowl, toss the chicken pieces with cornstarch until they are well coated
Heat oil for frying in a pan over medium-high heat
Fry the cornstarch-coated chicken pieces until they are golden brown and crispy
Remove and drain on paper towels
Season with salt and pepper while they are still hot
In another pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat
Add minced garlic, diced red onion, and diced bell peppers to the pan
Stir-fry for 2-3 minutes until they start to soften
Add the chilled cooked rice to the pan and stir-fry with the vegetables for another 2-3 minutes
In a small saucepan, combine sweet and sour sauce, soy sauce, rice vinegar, sugar, and water
Cook over medium heat, stirring constantly until the sugar dissolves and the sauce thickens slightly
Pour the sweet and sour sauce over the fried rice and stir to combine
Add the pineapple chunks and crispy chicken pieces to the pan
Stir-fry for an additional 2-3 minutes until everything is heated through
