Corned Beef Grilled Cheese
This Corned Beef Grilled Cheese is a delicious twist on the classic grilled cheese sandwich, featuring layers of flavorful corned beef, tangy sauerkraut, and gooey Swiss cheese, all grilled between slices of rye bread.
Ingredients:
- 8 slices rye bread
- 4 tablespoons unsalted butter, softened
- 1/2 cup sauerkraut, drained and squeezed dry
- 1/2 pound thinly sliced corned beef
- 8 slices Swiss cheese
Instructions:
Spread butter on one side of each slice of bread
Place 4 slices of bread, buttered-side down, on a work surface
Divide and layer sauerkraut, corned beef, and Swiss cheese evenly among the 4 slices of bread
Top with remaining bread slices, buttered-side up
Heat a large skillet or griddle over medium heat
Place sandwiches in the skillet or on the griddle and cook until golden brown and cheese is melted, about 3-4 minutes per side, pressing down occasionally with a spatula
