Strawberry Lemonade Cupcakes
Ingredients:
- 1 box white cake mix
- 1 cup strawberries, pureed
- 1/2 cup lemonade concentrate
- 1/3 cup vegetable oil
- 3 large eggs
- 1 teaspoon lemon zest
- 1/2 cup buttermilk
- 1/2 cup finely chopped strawberries
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup lemon juice
- 1-2 tablespoons milk
- Yellow food coloring optional
- Strawberry slices and lemon zest for garnish
Instructions:
Preheat your oven to 350F 175C and line a cupcake pan with cupcake liners
In a mixing bowl, combine the white cake mix, strawberry puree, lemonade concentrate, vegetable oil, eggs, and lemon zest
Mix until well combined
Stir in the buttermilk and finely chopped strawberries
Fill each cupcake liner about 2/3 full with the batter
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Let the cupcakes cool in the pan for a few minutes, then transfer them to a wire rack to cool completely
In a small bowl, mix the 1/4 cup powdered sugar with the strawberries to create a strawberry glaze
Drizzle the glaze over the cooled cupcakes
In another bowl, cream together the softened butter, 4 cups powdered sugar, lemon juice, and milk
Add yellow food coloring if desired for a lemony color
Pipe or spread the lemon buttercream frosting onto the cupcakes once the strawberry glaze has set
Garnish with strawberry slices and lemon zest
