Avocado Prosciutto Stuffed Mushrooms
Ingredients:
- 8 large mushrooms, cleaned and stems removed
- 1 avocado, ripe and mashed
- 4 slices of prosciutto, thinly sliced
- 2 cloves of garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
Set the oven temperature to 375F 190C
Heat the olive oil in a skillet over medium heat
Saute the minced garlic for one to two minutes, or until it becomes fragrant
After adding the prosciutto slices to the skillet, cook them for two to three minutes, or until they start to crisp up
Take off the heat and place aside
Place the chopped parsley and mashed avocado in a mixing bowl
To taste, add salt and pepper for seasoning
Spoon a little of the avocado mixture into each mushroom cap, and then top with a slice of crispy prosciutto
Arrange the filled mushrooms onto a parchment paper-lined baking sheet
Bake for 15 to 20 minutes, or until the filling is thoroughly heated and the mushrooms are soft
Before serving, take them out of the oven and allow them to cool slightly
If desired, garnish with more fresh parsley
